Ingredients

  • 2 cups (8 oz.) 475 ml (230 g) almond flour
  • ½ cup (123 oz.) 120 ml (50 g) coconut flour
  • 13 cup (123 oz.) 80 ml (50 g) sesame seeds
  • 13 cup (2 oz.) 80 ml (55 g) flaxseed
  • ¼ cup (113 oz.) 60 ml (40 g) ground psyllium husk powder
  • 1 tbsp 1 tbsp baking powder
  • ¾ tbsp ¾ tbsp ground cloves
  • ½ tbsp ½ tbsp ground bitter orange peel
  • ½ tbsp ½ tbsp fennel seeds
  • 1 tsp 1 tsp anise seeds
  • 1 tsp 1 tsp ground cardamom (green)
  • 1 tsp 1 tsp salt
  • 6 6 eggeggs
  • 1 cup 240 ml sour cream
  • 3 oz. (6 tbsp) 85 g (90 ml) cream cheese

Making low carb simple

Instructions

Instructions are for 22 servings. Please modify as needed.

  1. Preheat your oven to 400°F (200°C). Mix all dry ingredients in a medium bowl.

  2. Mix eggs, sour cream, and cream cheese in a separate large bowl.

  3. Add the dry mixture to the wet and stir until smooth.

  4. Pour the mixture in a well-greased and paper-lined loaf pan about 9 x 5" (23 x 13 cm). Bake in the lower part of the oven for about 60 minutes or until a toothpick inserted in the center comes out clean.

  5. Take the bread out of the oven, and remove it from the pan, and place on a rack to cool completely.

  6. Serve the bread with butter and your favorite festive toppings.

Tip!

This bread tastes best fresh or toasted. Slice the bread you don't finish the same day as baking it and keep in the fridge for up to a week or in the freezer where it keeps for at least a month.

    Step 3 says to stir dry ingredients into wet ingredients until smooth. It doesn't get smooth because there is so much of the dry ingredients. Hopefully it will still turn out well.

    2 tbsps of ground clove seem a lot, is it a typo? I followed the recipe and my dough has a bitter after taste. Hopefully the baked bread will taste better.

    The recipe only uses 2T of the seasoning blend, so you will have some extra left over. You won't use the whole 2T of cloves in the recipe.

    I made this perfect last night, although I didn't use a spice mix I used Onion and Garlic powder instead. Tastes lovely .BUT... I placed a plastic tub over the loaf overnight while it was still hot from the oven. So today it is moist. Is there a trying I can do to dry it out? I toasted a couple of slices and it was good.

    Toasting will be the best option to dry it out. The tip section recommends slicing it and storing in the refrigerator or freezing what you will not consume in a week.

    The recipe has not been tested with those ingredients, but I believe they would work. Let us know if you try it.

    What on earth is 1/8 of a tablespoon for the 5 person recipe??? I live on my own so don't want sdome thing for 22 people! Ha, ha! Can't we have a weight instead or at least a smaller spoon - teaspoons more accurate and more consistent on size all over the world than a tablespoon? I have no idea how big your tablespoon is either. Weird and confusing recipe. Sure it must taste nice but just looks like a very foreign recipe to me with such measurements.

    If you scale a recipe and end up with unusual quantities, you can round up or down to get to a measurement that makes more sense.

    Una, in the USA, 1 tablespoon is equivalent to 3 teaspoons (or 9 half teaspoons)
    So you can safely use 1/2 tsp for 1/8 Tbsp.
    I have calculated, using flour as reference for powder ingredients, that it would be about 1 gram.

    I really liked this recipe. It tastes like a soft cake with a crust. I added hemp seeds and chia seeds. I did not use the spices. I will make again for sure!

    It tastes like sour dough bread! I add myself some active yeast to it to give that "yeasty" bread flavor. I also don't use coconut flour (allergic) and sub psyllium husk for that and use ground flax seed. I sprinkle black sesame seeds on the top before baking
    and bake it about 40 mins.

    I have been looking for a nice bread recipe and this one is great. I leave out all the spices and left the rest as is. Turned out better than I had expected and will definitely be making it again.

    This recipe was delicious! I used tahini instead of the sesame seeds, reduced the amount of psyllium by about one third and omitted all the spices. (I was certain that I would dislike that combo of spices). I used a half teaspoon of almond extract instead. It turned very brown on the outside before the inside was cooked. So I sliced it up, put the slices on a cookie pan( Like zwieback) and turned the oven down to 250 to cook for another 40 minutes. It was lovely...one of the best keto breads ever! Very filling....very nice with peanut butter and butter. Definitely will be making this again! Next time I will try using vanilla instead of almond extract. JacquiC82 used garlic and onion powder.
